Vegan Carrot Cake with Chocolate Icing

Cake
- 3 carrots 350g
- 390 g plain flour
- 400 g sugar
- 90 g vegetable oil
- 250 g vegan milk
- 20 g baking powder
Chocolate icing
- 1 cup cocoa powder
- 1/2 cup sugar
- 1 tbsp vegan butter
- 120 ml vegan milk
In a blender, mix carrots, milk and oil.
In a bowl, mix it with the plain flour and sugar. Mix very well (use a mixer if necessary).
Put it in a greased tray with oil and flour. Bake it at 170C degrees for 55 minutes or until you stick a fork and it goes out clean.
For the chocolate icing, just mix all ingredients in a pot and cook until creamy.
Cover the cake with the chocolate icing.
