Vegan Carrot Cake with Chocolate Icing

Ingredients
  

Cake

  • 3 carrots 350g
  • 390 g plain flour
  • 400 g sugar
  • 90 g vegetable oil
  • 250 g vegan milk
  • 20 g baking powder

Chocolate icing

  • 1 cup cocoa powder
  • 1/2 cup sugar
  • 1 tbsp vegan butter
  • 120 ml vegan milk

Instructions
 

  • In a blender, mix carrots, milk and oil.
  • In a bowl, mix it with the plain flour and sugar. Mix very well (use a mixer if necessary).
  • Put it in a greased tray with oil and flour. Bake it at 170C degrees for 55 minutes or until you stick a fork and it goes out clean.
  • For the chocolate icing, just mix all ingredients in a pot and cook until creamy.
  • Cover the cake with the chocolate icing.
